Arabica coffee is a wet-processed coffee that comes from the island of Java. Most of it is grown on the east side in the "Ijen" volcano cluster on the Ijen Plateau at elevations around 1,400 meters.
A good Java coffee exhibits a relatively heavy body compared to the rest of the world, though lighter than some other Indonesian coffees from the surrounding regions. Java coffee has a rustic flavour profile with a lingering finish, herbaceous nuances in the aftertaste, and less acidity.
Java Robusta coffee has a flavour that is mixed with tobacco that cannot be found by any coffee bean. In addition, Java Robusta coffee has a fragrance that is stronger than other Robusta types, as well as the aroma of palm sugar with dominant acidity, thick body, balanced bitterness, sweetness, and tempting mocha aroma.
Cloves, a tropical evergreen tree of the family Myrtaceae and its small reddish brown flower buds used as a spice. Cloves were important in the earliest spice trade and are believed to be indigenous to the Moluccas, or Spice Islands, of Indonesia. Cloves are used to flavour many foods because of its strong aroma.
Green cardamom, is a spice consisting of whole or ground dried fruits, or seeds, of Elettaria cardamomum, a herbaceous perennial plant of the ginger family (Zingiberaceae). The seeds have a warm, slightly pungent, and highly aromatic flavour somewhat reminiscent of camphor.
Black peppercorns, Lampung peppercorns come from the Indonesian region of Sumatra. Found twisting up trees, these peppercorns are smaller compared to Tellicherry or Vietnamese peppercorns. Their flavour has a fruity and smoky roundness, with a spiciness on top of the tongue.
Coconut sugar (organic and non-organic), it is a sweetener cultivated from the sap of the flower bud stem of the coconut palm. Coconut sugar cultivation begins with ‘tapping’ the flower bud stem of a coconut tree, with farmers making a cut on its spadix. The sap inside then flows into containers placed below to collect it. The collected sap is then transferred into large woks which are placed over moderate heat to evaporate excess water, thickening it into a thick syrup. It is now coconut sugar.
